Ingredients for Chicken Enchiladas
- 4 tablespoons vegetable oil.
- 1/ 2 pounds skinless boneless chicken breast.

- 3 teaspoons cumin powder.
- 3 teaspoons garlic powder.
- 2 teaspoon Mexican Spice Blend.
- 2 red onions, chopped.
- 3 cloves garlic, minced.
- 2 cups frozen corn, thawed.
- 4 canned whole green chiles, seeded and coarsely chopped.
- 5 canned chipotle chiles, seeded and minced.
- 2 (28-ounce) cans of stewed tomatoes.
- 2/3 teaspoon all-purpose flour.
- 15 corn tortillas.
- 1/2 cups enchilada sauce, canned.
- 2 cups shredded Cheddar and Jack cheeses.
- Garnish chopped cilantro leaves, chopped scallions, sour cream, and chopped tomatoes.
Directions for making Chicken Enchiladas Recipe
